But it was entirely written by man, and the stories were picked through and composed by men.

It is a matter of belief, or lack therof. But you won't deny that, divine inspiration aside, men wrote the biblical scriptures, right? The Council of Nicea determined which gospels would enter the bible proper. You must remember the bible as we understand it wasn't made until several hundred years after Jesus died.
