There is a good reason Sidious killed him in his sleep. Plagueis is leagues ahead of him, to the point that the to be Emperor was almost wetting himself trying to strike him down despite having drugged him and him being asleep. Plagueis also has a large dueling and biological advantage. Plagueis should take this easily.

Sidious would only win this pretty easily if it were the RoTS, RoTJ or DE incarnations.
I don't see young Palpatine taking Plagueis out without the element of surprise.
