Why do SSJ change your apperance?

My Dear Melancholy,

 I understand that it increases your power and attributes. But why does your hair turn gold, do your eyes turn into emerald(green or blue), you get more hair, ssj3 bring your hair down, and why does the eyes become sharper?

 Saiyan physiology? I can't really find a way to answer this without an out-of-universe explanation which most people already know.

Transformation's are treated as external changes, too right?!

Like why does Kaio-Ken look red? It's just the way it is, I never really thought about it.

 An out-of-universe answer is that it was originally a cop-out for Toriyama's assistant, who was taking too long to do blackfills. Toriyama came up with an altered version of Goku that wouldn't need blackfill in the manga, hence the Super Saiyan transformation.

However, given the fact that the Saiyan's overall change when they go SSj is superficial, I've always considered the Super Saiyan to be more a transformation of ki than one of the body.
The outward appearance of the Super Saiyan is simply a reflection of that change in ki. Hence why the power difference between both states is huge despite them not actually having a serious physical change between states like Freeza or Zarbon.
