It all has to do with art style and Toriyama's development as an artist.

You can see changes in his art style every four volumes or so.

Goku's muscle mass got more toned as the series progressed, I think his hair slightly gets shorter too and less wild. This is also a similar case with Vegeta who has a smaller and more defined face in proportion to his head while being a lot less lean and more muscular than when we first saw him.

His mucles gets more toned during Android Arc but his Super Saiyan form changes when he masters it

The hair flowed a lot more in the Freeza arc. I liked it more that way, honestly. In the Cell and Boo arcs the Super Saiyan hairs always stay fix in the same position.

You forgot one Andro.

And Goku's Super Saiyan during the Freeza arc was more as if he'd put too much hairspray in. While the ones in the Cell and Boo arcs simply developed to actually look like it was free-standing.

Just the style of the Super Saiyan form from earlier in the manga is more preferable than the one later on. It's simpler and I like that.
