The scale of time

Yes, there is the confounding issue of (how could the entire Buu saga take place in just one day).

A 22 minute episode is easily 5 minutes or less in DBZ time.

Many of actions separately explained through the anime happen concurrently.

But more importantly, the anime is slowed down (and the time frame we view it in is not the same as the DBZ universe).

On some occasions, it has shown clashes in the air which are happening lightning fast in seconds (real time). The long drawn out fights in real time are most likely actually happening in that speed as well. The fighters have improved in speed each saga, but we view them in the same speed because its scaled. It just wouldn't be entertaining to show the fighters fighting so fast you can't actually see them. Also, the anime slows down the time to let the characters express their emotions.

Despite it being a very big saga, the Buu saga probably happened in only a couple hours, or maybe even much less than that.

The Buu saga didn't happen in a single day lol. It happened over 3 days iirc (Only counting from the day of the Budokai, otherwise it was about a month)

To think that Gohan went from being 6-7x weaker than SSj3 Goku to over 700x Stronger than him in a matter of 3 days

Yeah, i've noticed that too. In DB we have everything, mornings-days-afternoons-nights. In DBZ it's only days.
Well, not only days. Sometimes we get nights. Like, the time when Gohan comes home from high school to tell Chi Chi and Goten that Gokuu is returning.

It's because being night would mean Toriyama would have to colour the sky in every panel, which he hates :P

Yup.
But he had assistants to help him fill surfaces with black color.
But, who knows? Maybe he hated to have assistants help him, too :P

Well , Goku vs Frieza was a 5 minute fight , so Buu Arc being one day isn't a surprise .
