I don't think you can eat a bunch in one sitting. I think it has to be spaced out. Not really supported by anything, but whatever. If he did keep gaining strength, he'd probably be stronger than SSjin Goku (Namek) IMO.

It could be like the power up given by Guru. Gives that boost in power at the time but he done again there would be little if no effect. That aside, and assuming that the fruits keep adding the same power on top of each other. He could probably pass Mecha Freeza level.
