To add to that: why not have her hair change throughout DB/Z (screw GT )?? As she grew older, her hair changed. Not unlike most humans who tend to try different types of styles throughout their life.

It would make sense that she was stressed over protecting her son from trying to fight the androids and living through that torment, also, if you think about it she was probably lonely since all of the others were dead, she must have just let herself go because she didn't care anymore about her looks.
