Are Saiyans immortal?

I don't think they are immortal, they obviously as stated remain in a younger body, although that does not mean they don't age. Also at the end of GT it shows pan as a grandmother, the way it is done to me makes it seem as she is the only one left(other than goku who went with shenron) which indicates that they died naturally.

Yep, you're right, I have just finished watching DBGT and that episode explains it. They can age and die of old age as there is no mention of Vegeta and the others in the scene with Pan.

What's still confusing is that Pan looks like a wreck in the time when her grandchild Goku Jr. is still a small kid, when Goku and Vegeta still looked great when Pan was a kid. But I guess you can say it's because she's only a quarter-saiyan.

thats right i was thinking Pan was half saiyan but gohan wasn't full blooded was he

Unless killed of course...

Almost the entire Saiyan race was destroyed by Freeza, and the others who we know were killed by the Z fighters. They don't seem to age a bit once they reach their adulthood. So are they like elves or something? Can they die of natural cause or at least start aging?

goku died of natural cause in trunks future
Natural causes, yes, but not old age.

IMO, beings with high Ki levels will live longer than beings with low ki levels, like humans. Thats why Roshi has been alive for so long, and Goku and Vegeta will probably be alive for thousands of years. Not immortal though.

I remember reading somewhere that Akira Toriyama explained this one in an interview. Something along the lines that saiyans possess the same life range of humans but just outwardly age slower. Something along the lines so that it helps them fight for longer. And that when they actually get old, they age up relatively quickly.

Next Toriyama is asked whether Saiyans are always young. As a fighting race they stay young for a long time in order to maintain their power, but Toriyama explains that their actual lifespan isn’t much different than Earthlings, and they quickly deteriorate after a certain age. Toriyama adds that Saiyan hair style still changes with age, and that Nappa went bald. Like with Earthlings, hair composition various from person to person.

If saiyans were immortal, Vegeta wouldn't have wanted to get the dragonballs. I think some people may think so because Goku keeps coming back lol.

The only character that I remember being immortal was Garlic Jr. Look where that got him? He is probably still suck in the dead zone xD.

They're like Wolverine, it takes forever for them to get old. Aren't Goku and Vegeta 50 in GT?

Roshi mentioned that he drank from the fountain of youth. So I think in his case it's because of that.

Vegeta is 56 at EoZ, so he should be 61 at the start of GT. They don't age as fast as humans, but they do age, I guess.
