With respect to their unique abilities, I think Merged Zamasu would have the edge. Beerus doesn't exhibit quite as much geometrical and typological versatility with his offensive ki attacks as Zamasu. However, with that said, Beerus can make up for his shortcomings in ki projection with his destruction perks as an Hakaishin and the fact that he is able to use Ultra Instinct to a degree. Now provided Zamasu remains composed, he could use his Tai Sabaki to try and counteract Beerus' autonomous martial combat methods; the type of opponent coupled with their reputation will be an important component to this fight. Since Beerus, from Zamasu's perspective, is a reputable deity with strength surpassing that of anyone he's ever faced before, I don't believe he'll lose his composure quite to the same extent as when he was pressured by entities whom he perceived to be inferior creatures of iniquity and corruption. It should allow him to hopefully keep his head together while fighting.

Now Tai Sabaki vs Ultra Instinct... I think in the end, UI would win out. Zamasu can compensate for this shortcoming with his telekinesis, though. What the fight may come down to is who uses their specialty abilities first. If Beerus is able to successfully land Hakai then he wins. Alternatively, Zamasu could immobilise Beerus then proceed to use the biokinesis he demonstrated in the manga to constrict the Hakaishin's airways and kill him that way. So basically, I think the victor will be whomever draws first. Good match, by the way. I think these two make for an interesting combat dynamic since it's pitting the class of Hakaishin up against their mutual counterpart, Kaioshin, in a contest of abilities and aptitude rather than just sheer strength.
