Why aren't more crossovers done in anime and manga? I know there has been a couple of crossovers between dbz and one piece, one of them with Toriko, but what about other series?

Manga is usually more of an individual thing than comics. It's usually written and drawn by the same person, whereas comic creation is a much more collaborative affair, so it makes sense that the latter lends itself more to crossovers. Also, most manga is written as a closed series, whereas comics are a little more open. Manga is generally more about a beginning-to-an-end type story, whereas comics are generally 'let's create characters and then tell as many stories as we can'.

Plus, it helps that comics characters are generally under either the DC or Marvel banner and are usually set in the same universe, whereas manga universes are mostly self-contained.

Honestly, probably because they're not very good. I've never read or watched a crossover manga/anime wise that I've ever liked.
