Let's assume he defeated Goku, Vegeta and future trunks.

How would he deal with future Jiren?

Jiren would demolish him.

Merged Zamasu may be a different story though

Jiren would be massively screwed if Merged Zamasu visited Universe 11. Destroying his body would be a peace of cake for Jiren ... but what would he do afterwards, unless he has the Omniking-button?

I dont think Merged Zamasu would be overwhelmingly outclassed if it's the one who fought Vegetto blue in the anime and he's made immortal by the super Dragon Balls, he can't be killed, I even kind of doubt Zeno truly killed him.

Then he'd regret it as he'd constantly get pummeled by Jiren.

He wasn't killed, he was erased. So he never existed in the first place I guess lol

Maybe, but people still remember him in the present timeline.

Zamasu could just be floating around in an empty timeline forever and ever, his own personal hell he wrought upon himself. A truly ningen free universe.

Actually, wasn't Zamasu killed all kaioshins, and thus god of destruction from each universe was gone? If that's the case, Jiren should have met Zamasu, and the fact that Zamasu was still alive means Jiren would have met his end instead?

Not necessarily, Jiren although seemingly respected by his god of destruction does not appear to be his friend as of yet, so if Zamasu was to kill the god of destruction and then dissapear from the universe, Jiren could simply take it into his own hands to protect his universe.

Zamasu specifically targeted kaioshins because he was to weak to defeat the gods, so Jiren would have obliterated him.

Zamasu would have been subjected to annihilation courtesy of Jiren unless it was his fused self. No one in this series appears to be all that far thinking when it comes to their abilities. Nothing would be preventing Zamasu from using Kai-Kai to teleport Jiren into the vacuum of Space if he got a hand on him. Better yet, just construct a star with the same intensity of heat and radiation as Eta Carinae; this star is much hotter than the Sun and even if Jiren was able to construct a barrier in time to defend himself from the heat, all of the oxygen in the area would immediately be changed into carbon dioxide. Plus, the radiation would likely have some significant detriments for him.
